Mole Negro Chicken
Oaxacan-style mole built from chiles, chocolate, seeds, and warm spices.

Method

Toast and rehydrate the chiles, then reserve the soaking liquid.

Blend chiles, onion, sesame, cinnamon, tortillas, and stock until smooth.

Fry the mole in oil to deepen the flavor, then loosen with stock.

Add chocolate and chicken and simmer 45 minutes until silky.
