Smoked Lamb Shoulder
Lamb shoulder smoked over cherry wood with a rosemary-garlic rub.

Method

Coat with oil and press on the rub the night before.

Smoke at 250F for 4 hours, spritzing with water hourly.

Wrap in foil and finish to 203F internal.

Rest 30 minutes and pull or slice as desired.
