Collard Greens with Smoked Hock
Slow-simmered collards with smoked ham hock and a splash of vinegar.

Method

Simmer the hock with onion and garlic in stock for 30 minutes.

Add the chopped collards in batches and stir to wilt.

Cover and simmer 90 minutes until silky.

Finish with vinegar and red pepper, and shred the hock meat back in.
