Form loose 150-gram balls and rest at room temperature 10 minutes.

Mix mayo, ketchup, and mustard for the sauce.

Sear and smash on a screaming-hot griddle for 2 minutes until lacy.

Flip, top with cheese, and stack with pickles and sauce on a toasted bun.
