A simplified pork-broth ramen with chashu, soft egg, and scallions.

Method

Blanch the bones, then simmer with onion, garlic, and ginger for 8 hours, skimming.

Strain and season the broth with shoyu tare.

Cook the noodles according to package directions.

Pour the broth over noodles and top with chashu, eggs, and scallions.
